A Korean Sweet Potato Cake Recipe to Spice up Your Fall
Korean sweet potato cake, or “Goguma cake” in Korean, is a layered cake with sweet potato filling and whipped cream. In contrast with American sweet potato cakes, Korean sweet potato cakes are mildly sweet and require Japanese sweet potatoes, which are sweeter with purple skin and yellow flesh, as its key ingredient. Bake this delectable cake to get into fall spirit with the family or simply enjoy on your own if it’s too good to share.
Ingredients:
Sponge Cake
1 cup of all-purpose flour
½ cup of sugar
½ cup of butter
4 eggs, whites and yolks separated
½ teaspoon of salt
¼ teaspoon of baking soda
Sweet Potato Filling
3-4 medium-sized Japanese sweet potatoes
1 cup of heavy whipping cream
1 tablespoon of sugar
Whipped Cream
1 cup of heavy whipping cream
3 tablespoons of sugar
