Korean sweet potato cake, or “Goguma cake” in Korean, is a layered cake with sweet potato filling and whipped cream. In contrast with American sweet potato cakes, Korean sweet potato cakes are mildly sweet and require Japanese sweet potatoes, which are sweeter with purple skin and yellow flesh, as its key ingredient. Sponge Cake

1 cup of all-purpose flour

½ cup of sugar

½ cup of butter

4 eggs, whites and yolks separated

½ teaspoon of salt

¼ teaspoon of baking soda

3-4 medium-sized Japanese sweet potatoes

1 cup of heavy whipping cream

1 tablespoon of sugar

Whipped Cream 

1 cup of heavy whipping cream
